Qi Tea Recipes to try during Lock Down - Matcha Cheesecake Bars

Usually our lives are busy and hectic, consisting mostly of ticking off our to do lists before the day ends and we get into bed exhausted by the tasks of the day.


One thing we can all relate to during Covid-19 lock down is the change in pace our lives have had to adapt to, at first many of us found it difficult to adjust and thought of this change as a negative one, after all, no one likes enforced change, however as time has gone on so many of us are finding the change in pace to be one of the greatest gifts we could have been given.


Suddenly the sky is bluer, the birds are louder, the sunshine is amazing and we have all the time in the world to enjoy each day and try the things that we truly believed we never had time for before…

With all this extra time on our hands we, at Qi Teas have been flexing our tea inspired creating muscles!

We present to you - no bake Qi Matcha Cheesecake Bars! A delicious way to be creative, add some great antioxidant goodness to your day and try something new!


You will need -

1 large pack of white chocolate chips or chocolate bars

1 and ½ teaspoons Qi Organic Matcha powder

1 pack chocolate cookies or biscuits

½ tub double cream, chilled

1 8-oz. pack of cream cheese, at room temperature

3 tablespoons sugar

16 blackberries, for serving (optional)


Line a 9x9-inch metal baking pan with tin foil, leaving overhang on all sides.


Stir the white chocolate chips in a medium metal bowl set over a saucepan of simmering water (a bain-marie) until melted and smooth


Using either a food processor or in a thick bag bash/blend the cookies or biscuits until fine.


Add 2 tablespoons of the melted white chocolate and blend until the mixture begins to clump together. Firmly press cookie mixture onto the bottom of the prepared pan.


Chill while you make filling.


Stir the Qi Organic matcha powder into remaining melted white chocolate until smooth.


Whisk the cream in a bowl until soft peaks form.

In a separate bowl, mix the cream cheese, and sugar until smooth. Combine with the white chocolate/matcha mixture.

Fold in the whipped cream in 2 additions. Spread over prepared cookie/biscuit base.


Chill until filling is slightly firm, at least 2 hours. Using foil overhang, lift from the pan and cut into bars. Garnish with blackberries and serve.
